# Cooking

Recipes measure by volume in some countries and by weight in others, so following one often means converting. A US cup is about 237 milliliters and holds 16 tablespoons, but a cup of flour weighs less than a cup of sugar, so weight conversions depend on the ingredient. Gas mark 4 is about 180 °C.
